loran's escape

While playing a draft, my opponent target a powerstone with mightstones animation, in response I cast loran's escape targeting the powerstone, thus giving it hexproof from opponents spells, but the spell still resolved and animated his powerstone. I believe this interaction should have fizzled his mightstone animation, since the powerstone was no longer a valid target for the spell

Working correctly. Hexproof does not prevent a player from targeting a permanent they control, so you cannot fizzle an opponent's beneficial spell in the way you are describing.
It is unlike protection or shroud in that respect.
