If you have 3 creatures, first could be any creature 2/1 or above, and 2x Ornery Tumblewagg on the field, both different power and toughness, then you pick the one on the right hand side to Saddle 2, paying the cost with the third "any 2/1 or above" creature, then you proceed to make both the Ornery Tumblewaggs match in stats, by giving them the +1/+1 counters they give as a passive, then enter the battle phase with both Ornery Tumblewagg stacked upon eachother with same stats, game will not allow you to attack with the saddled Ornery Tumblewagg only, you either attack with both Ornery Tumblewagg or just the one that isnt saddled.
