Approach of Second Sun Countered?
Approach of the Second Sun states that once the card is “cast” from your hand, its effects take place. This means that even if it is countered, its effects should still take place; the effects do not begin to take place once it is on the battlefield, only when it’s initially cast. My card was counterspelled, I was playing on iOS.

AotSS does not have a cast trigger. The condition starts with "if". A triggered ability, even a cast trigger, as seen on Ugin, has to start its trigger condition with "when", "whenever", or "at" to denote their trigger condition. "If" is not an indicator for a triggered ability. It is an incicator for a replacement effect, or simply a normal condition in the English meaning. And thus the condition of AotSS is checked on resolution.

I will add one amendment and clarification.
There are some cards such as Ugin, Eye of the Storms https://scryfall.com/card/tdm/1/ugin-eye-of-the-storms which have "when you cast this spell" clauses whose abilities themselves are placed on the stack even IF the card itself never resolves. See rule 601.2i. The card can be countered, but not necessary its abilities.
The (now legacy) wording is awkward in AotSS, but the 2nd one MUST Resolve in order for the effects of merely having Casted the first one to work.
Casted is a different state than Resolved. One can't counter "casting". One can counter "resolving". Counterspells only effect the stack--hence why one can counterspell a counterspell.
Any triggered abilities that are under a "when you cast this spell" clause still occur irregardless of whether or not the rest of the card resolves. The only way to stop that ability from taking effect (if it's a stack-based ability) is to use a stack-deletion instant like Hurkyl's Final Meditation or Time Stop.

Your are very much misunderstanding how Aproach of the Second Sun works. EVERY spell has to resolve to do its thing. And baring things that make a spell uncounterable, ANY spell can be countered. If a spell is countered, NONE of its effects happen.
AotSS checks DURING ITS RESOLUTION wether you've cast a spell names AotSS already during the game (that spell could also have been counterd, it does not have to have resolved, you having cast it is what matters). If you did, THEN you win the game. But if the spell doesn't get to resolve, you won't even get the 7 life.
Also, instants and sorceries do not enter the battlefield. They CANNOT enter the battlefield.
