Horn of Gondor stops making tokens.
Had that + token doublers out (Ojer taq & anointed procession i believe), after around 225/250 tokens it just stopped making any, UNTIL other tokens were made, then after words, when it should have made 500+ tokens, it made 4. Also had cards that made me gain life when creatures enter the battle field, not sure if that has anything to do with it. No triggers were present to get rid of any effects, HoG still showed 200+ soldiers were present on the battlefield.

You shouldn't be building a deck that relies upon creating infinite copies of tokens..
It wasted your opponents time and is not a viable strategy due to pulse, the end, legions end, surgical extraction, nexromentia and the numerous other cards to deal with this.
This is what they call a meme deck. It's not competitive ..and also yawn 🥱
Rethink your strategy of playing the game. These silly meme decks are not viable outside bo1
Shoving 230 copies of a creature in your deck, having a deck size above 99 + companion , relying on excessive life gain , token generation and mill.
Sideboarding by adding all 15 cards to your main deck..
All this is bad gameplay for both you and your opponent.

The token limit on Arena is 250 per player. If you would go over that limit, no tokens are created.
