This appears to have been fixed in either 2021.07.10 or 2021.07.21, but it isn't listed in any of the patch notes for some reason.

I was about to report the same bug with a video recording, but I'll attach it here instead of making a separate report.
The video shows the interaction with Sedgemoor Witch, with the expected outcome that there should be five total Magecraft triggers (one more than the number of creatures sacrificed), but only one actually occurs, creating only one Pest token instead of five. I've also observed the bug with Witherbloom Apprentice, and have seen another report of the same bug occurring with Witherbloom Pledgemage, so the interaction appears to be broken for all Magecraft abilities.

"Unable to sacrifice Ollenbock Escort to grant invulnerability and +1/+1 counter"
That's now how the card works: it does not grant a +1/+1 counter. You can only sacrifice it to grant indestructible to a creature which *already* has a +1/+1 counter. If you don't have any such creature, you should not be able to sacrifice Ollenbock Escort.
