I am also having the lag issue in gameplay on my Mac-- only in gameplay, not on the home screen, store, etc. (macOS Catalina 10.15.7). Game is unplayable due to the lag.
The game started doing this with the new Alchemy update on 6/02; when I logged in today 6/03, the system appeared to downloaded a patch or hotfix, but this has not improved or solved the problem.
