Hello! Here to report that I have the same issue, and I also do not get Set Completionist I from having 1x of each card in an alchemy set. Whether they intended to include alchemy or not, it's certainly implied that it should work by the information that "any set found on the set completion screen" is eligible. If alchemy is not intended to count, then it would be nice of them to update the reminder (? maybe the wrong name, what shows up when you hover) text to explicitly confirm alchemy sets are ineligible.

This bug is also affecting me - in my case I did not get set completionist 1 or 2 despite having the full OTJ alchemy set.

You should be able to concede when this combo is happening: if on desktop, hit "escape" (or click the settings cog in the top right corner) and then click "concede." I imagine in the app you can similarly enter the settings menu and click concede. EDIT: However, the ability to enter settings during this loop seems to have gone away during the latest update (it was previously possible, I did it like last week). This definitely seems to be bugged, though.
Also, the loop doesn't end in a draw because there is a way to escape it - when one player goes down to zero life, they lose the game. The only reason this would cause a draw is if your opponent had a platinum angel type effect, which then results in an infinite loop with no way to break out (assuming no player chooses to remove any of the creatures involved in this inescapable loop).
