Parallel Lives copies tokens created by effects or abilities, e.g. the tokens from Felidar Retreat. When Volo copies a creature spell, the spell is identical, but the creature that is created is a token because of a game rule (copied creature spells become tokens), not from Volo's effect. If his effect said "create a token that is a copy of that creature when it enters the battlefield" or something, Parallel Lives would copy it, but in this case it does not.

Fading Hope reads "Return target creature to its owner’s hand. If its mana value was 3 or less, scry 1."
This means the first effect, "Return target creature to its owner’s hand.", will always happen if the spell resolves. The second effect, "If its mana value was 3 or less, scry 1.", is what applies if the mana value is less than 3. So it can always return (if the caster can pay additional costs, like the life to target Fleshgorger) but not always scry. Hope this clears that up.

When a creature spell is on the stack, it is not a creature. They become a creature when the spell resolves and the creature enters the battlefield. Destroy effects target creatures that are on the battlefield, not spells that are on the stack. A counter like Essence Scatter for example, could target the creature spell before it resolves. Otherwise, if you have a kill spell like Go for the Throat you will have to wait for the creature to actually exist on the battlefield before you can target it. I hope this clears this rule up.

That only rewards the style, not the card itself. I agree that it is dumb, but it is not a bug.

Gwenna reads "Whenever you cast a creature spell with power 5 or greater, put a +1/+1 counter on Gwenna, Eyes of Gaea and untap it." Cityscape leveler has 8 power. Because casting a spell happens after adding mana, Gwenna can be untapped after casting a spell she helped pay for.

Platinum Angel is not legendary, one can create as many copies of it as one wants and they will not be subject to the legendary rule.

Giada's ability is not a triggered ability, it is a static ability. If it read "whenever another angel enters the battlefield under your control, put a +1/+1 counter on it" instead, Tocatli Honor Guard would counter it, but because the wording is passive it does not.
