Untapping my creature after being delcared attaker removed it from combat

I declared a creature a few +1/+1 counters on it as an attacker and my opponent used an ability or cast a spell i dont remember where the untap came from but it was after i had already declared attackers and it removed my crature from combat

Yes, such cards exist. They untap and remove from combat. That is their effect. Nothing wrong here, when the card does exactly what it says it does.
