Full control did not work.
Turn 2: Played Dawntreader Elk.
Turn 3: I activated Full Control, then I activated Dawntreader's ability, hoping to put the trigger on the stack, so I could cast an instant that would return it to the battlefield after it died. Instead, it automatically resolved the trigger and I couldn't bring my Dawntreader Elk back from the dead.

It did not work because your sequence was off. You cannot target the Elk when it has already left the batlefield. And it has already left the battlefield, because sacrificing it is part of the activation cost. So it was gone before any player got priority to respond. To get the result you want, you have to FIRST cast your spell, that will bring it back, and THEN after that resolved sacrifice the Elk.
