In an alchemy game, it says that my opponent has 81 cards in their deck

And? That is perfectly fine. Magic only has a MINIMUM deck size for constructed decks of 60 cards. Arena has a MAXIMUM deck size of 250 cards. Magic has NO maximim deck size limit.
