I attempted to unlock my Ritual Chamber room, but my opponent used Spider Sense (or the Omenpath's version) and countered it, meaning I couldnt get my 6/6 flyer. Since opening a room doesn't use the stack, It shouldnt have been to be interacted with, especially since it wasn't an instant, sorcery, or triggered ability, as Spider-Sense specifies.

Unlocking a room does not use the stack, correct. But the event of unlocking it TRIGGERS the ability that creates the Demon. And that trigger CAN be interacted with. Hence why you got an unlocked Ritual Chamber after all that, yet no Demon token. Because you unlocked the room, the trigger from that got countered.
