receiving only one daily
I'm only receiving one daily quest every day. Issue started last week.

Not an issue. Everyone gets one daily quest per day. Has been the case since the very beginning of Arena. When a new set comes out, everyone goes up to a full three open dailies, but otherwise, one daily per day it is. You can have up to three open dailies, so you do not need to complete the new one right away.
