create a function that allows the player to select what lands to tap for mana. Have lost multiple games due to strip mine being tapped for mana when it could have been used to win the game instead.

You CAN disable the autotap. In the settings menu. If you do, Arena will only propose how your mana sources are used, you'll have the final say in it.
