Admanatoise does not block Sephiroth procs
Even though the card says that is blocks ALL damage to players and other permanents Sephiroth procs will still drain the player with no damage targeted at Admanatoise itself.

Sephiroth is life loss not damage. Adamantoise can't stop life draining effects like Exsanguinate, but can stop damage effects like Banefire. Damage can cause life loss, but not all life loss is damage.
