Mobilize tokens are sacrificed IN the end step. Since Essenceknit Scholar's triggered ability has an intervening-if clause, that sacrifce simply happens too late. Because in order for the trigger to even go off the whole trigger condition, including the if-condition, has to be true at the time of triggering, so when the end step begins. In essence, a creature has to have died under your control before the end step begins.
