Turn skipped
The game wouldn't proceed past my opponent's Sheoldred trigger on my draw step and then ended my turn without giving me the chance to do anything.

Any playable instant or activated ability, that is not a mana ability, can respond to the trigger. You most likely had one and did not realize it. The game was waiting for you to pass priority. On Arena there was also a wait implemented in your upkeep for Sheoldred, the Apocalypse, to allow players to act before a card is drawn, without having to set a step every single turn.. But passing there does not pass priority for the response to the trigger in the draw step.
